Vegan Carrot Ginger Soup…
This soup is AMAZING!! i’ve made it 4 times already..
- Melt coconut oil in a pot, add half an onion, let simmer..
-Add about three cups of vegetable broth, bring to boil
-add half a half a cup of fresh ginger (use grater/rasp)
-3 large chopped carrot.. (if there isn’t enough liquid to soften the carrots, just add water)
- add table spoon of curry and a table spoon of honey (to sweeten)
boil until carrots are soft and throw it all in a blender, add a can of coconut milk and puree away!
Greg’s coming home tomorrow! So I’m going to throw this all into the slow cooker tomorrow to keep warm, this way he has some hot soup and croissant’s (which are store bought) when he comes home tomorrow.. This is the most domesticated I get..
